Zoo Day!

Today we decided to go to the zoo with our friends Amy, Story and Meila.  They have never been to the zoo and we haven't been in months.  I was thankful to get out today instead of being cooped up in the house and the weather was nice!

After we went to the zoo, we headed to Walmart then made Sonic happy hour.  Then we stopped by Jay's office to see him.  We don't ever get to drop in so it was fun for all of us!  We love to see where daddy works all day....we are soooo proud of how hard he works to provide for us!

I have a new helper with the laundry these days.  Randomly I decided yesterday to teach Karis how to do the laundry.  I taught her how to sort, start the washing machine, and start the dryer.  She LOVES to do laundry.  She was begging me to wait until today so she could help me.  She literally did 2 whole loads (sort, wash, dry and take out of dryer) by herself.  I supervised of course but she was so proud of herself!  I didn't know how to do laundry that early and I really wasn't planning on her really doing it herself but she wanted to, so I let her!  Hopefully her enthusiasm will stick!

Tonight I tried a new recipe I got off of Pinterest.  It is called Crispy Southwestern Chicken Wraps.  I was unsure of how good it would be but I loved it.  ALL THREE of my kids liked it too, even Lucy.  I will be eating leftovers tomorrow for lunch!

The recipe is below and I got it from here...

Crispy Southwestern Chicken Wraps
1 cup cooked rice, warm or at room temperature
1 cup cooked, shredded chicken (I used canned)
1 can black beans, rinsed and drained
1 green onion, finely sliced (white and green parts)
1/2 red or green pepper, diced
1/4 cup fresh cilantro, chopped
juice of 1 lime
1/2 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic salt
2 cups shredded cheese (I used a combination of monterey jack and sharp cheddar)
Sour cream (optional)
6 burrito-sized flour tortillas
Mix rice together with chili powder, cumin and garlic salt. Add remaining ingredients except for cheese and sour cream. Sprinkle cheese over tortillas, leaving 1/2-inch border around edges, then arrange chicken and rice mixture down the center of each tortilla. (Optional: on some of the wraps, I dotted the cheese with about 1-2 tablespoons of reduced fat sour cream before arranging chicken and rice mixture down the center – it made the wraps delightfully creamy.) Roll stuffed tortillas, leaving edges open. Spray the tortillas all over with cooking spray.
Heat a large non-stick skillet (or griddle) over medium heat for 1 minute. Arrange 2 wraps, seam-side down, in pan and cook until golden brown and crisp, about 2-3 minutes per side. Transfer to a plate and repeat with remaining wraps. Serve.  Good dipped in ranch dressing too!

Such a fun day!  We are all going to sleep good tonight!!!
