Happy Birthday Pop, Uncle Matt and Karis

My dad's birthday was October 3rd and Karis and Uncle Matt's birthday are October 4th so we have alot to celebrate as a family during the month of October.  Today the whole gang came to our house for dinner and celebration.  We had steak, baked potatoes, green bean casserole, and Red Lobster biscuits for dinner and then 2 yummy desserts, Chocolate Chip pie for Pop and Red Velvet Brownies for Matt....yum!

Matt and Tiff gave her some keepsake stones so that she could make/paint them herself.  She loved it!

I made Pop a Chocolate Chip Cookie pie that I found here and it was delicious!  It was just like a big gooey chocolate chip cookie (hence the name haha) but better!  It was great with ice cream!

Chocolate Chip Cookie Pie
1 unbaked 9-inch (4-cup volume) deep-dish pie shell*
2 large eggs
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
3/4 cup (1 1/2 sticks) butter, softened
1 cup (6 ounces) semi-sweet chocolate morsels
1 cup chopped pecans
Serve with ice cream (optional)
  • Preheat oven 325 degrees F.
  • Beat eggs in large mixer bowl on high until foamy.
  • Beat in flour, granulated sugar and brown sugar. Beat in butter.
  • Stir in morsels and nuts and spoon into pie shell.
  • Bake for 55-60 minutes. Cool on wire rack. Serve warm.

* If using frozen pie shell, use deep dish style and thaw completely. Bake on baking sheet and increase baking time slightly.



Matt's favorite desserts are Red Velvet cake and Brownies so my mom found this recipe on Pinterest and made it for Matt.  It was yummy and so rich!

I love my family and really enjoy hanging out with them.  Since Jonathan and Jenna now live out of town, we don't get together as much as we would like to, but it sure makes us appreciate the time we do have together more.  Love all you Nasons! :)
