Birthday, Chicken Quesadillas and some Lucy first eats

We went to the sprinkler park to celebrate our buddy Kinsley's birthday.  It was a hot day but so much fun and the kids loved it...didn't want to leave hours later.  :)

Lucy liked the fountains if she was on the edge of them or in my arms.   She has been a momma's girl lately.







Lucy helped herself to sissy's blue drink and enjoyed her first Kool-aid burst...


And she had her first taste of pizza and cupcake...she wasn't too impressed with the cupcake surprisingly.  She spit it out!  She may have the no-sweet tooth like her daddy!

Tonight I made the Pioneer Woman's Grilled Chicken and Pineapple Quesadillas and it was SO GOOD!  It was time consuming this time but I don't think it would be the next time around.  I just had to figure out what I was doing.  

I took a few pics but hers are much better of course. 

Cut up your pineapple, put it on skewers and grill 'em up...


Then cut 'em up...


Butter and brown your flour quesadillas...


Thaw, thin, and salt and pepper your chicken.  Cook it thoroughly and put your fav BBQ sauce on them.  Then cut up into thin slices.


Then put cheese on your tortilla (I used different cheeses for each member of our family...kids just had sharp cheddar, Jay had monterey jack, and I had provolone).  Then add your chicken, pineapple, jalapenos if you want them (we didn't use them), cilantro and extra BBQ sauce.


Cover them with another tortilla and let the cheese melt.  Cut them into wedges and eat up!  I made some refried beans, sour cream and fresh grilled corn on the cob to eat with them.   It was sooo yummy...well everything we have made of hers has been.  I am going to get her cookbook!!!

Grilled Chicken & Pineapple Quesadilla

Ingredients
  • 8 whole Flour Tortillas
  • Butter Or Margarine
  • 2 cups Grilled Pineapple, Sliced
  • 3 whole Boneless, Skinless Chicken Breasts
  • Salt And Pepper, to taste
  • 3 cups Monterey Jack Cheese, Grated
  • 1 whole Jalapeno, Sliced
  • Cilantro
  • 3 Tablespoons Barbecue Sauce
Preparation Instructions
(To grill pineapple: cut wedges, stick on skewers, and grill over low heat. Cut into slices.)
(To pound chicken, place inside a Ziploc bag and pound with a mallet or large can to flatten to uniform thickness.)
Sprinkle with salt and pepper and Cajun spice (or cumin/cayenne, etc.) Drizzle olive oil on a grill pan and grill on both sides until done, brushing with barbecue sauce. Set aside and slice into very thin slices.
Warm griddle over medium heat and put sizzling butter or margarine in the pan. Slightly warm and toast tortillas on both sides, then remove from griddle and set aside.
To assemble, sprinkle four browned tortillas with grated Monterey Jack. Arrange chicken slices evenly over the surface. Add pineapple slices and jalapeno slices. Sprinkle on cilantro. If desired, drizzle extra barbecue sauce over the top. Add second browned tortilla on top of each one. (You’ll have four complete quesadillas at this point.)
Add to oven to warm, or back to skillet to warm, until cheese is melted. Cut each quesadilla into six wedges. Serve with sour cream, pico de gallo, and lime wedges.

Not only did Lucy have pizza, cupcakes and kool-aid for the first time today, but she tried pineapple...didn't like it.  Then she tried corn on the cob and LOVED it!  Jay just tried to give it to her, thinking she wouldn't like it but she kept coming back for more!!!  So far she is loving her veggies and not so big on the sweets...just like her daddy.
